Makes 2 servings. I double the recipe for us.
Ingredients:
1 zucchini, diced
1 carrot, diced
1/2 onion, diced
1 cup dried lentils
1 tsp curry powder
4 cups water or stock
Place vegetables and lentils in stock pot, cover with water/stock, add curry. Bring to a boil, then simmer 1 hour.
